You may notice I have changed the category name “Weekly Recipe” to “Sometimes Weekly Recipe”… soley for the reason of, well, I don’t cook on a weekly basis.  Oh I know I need to cook more, I think I do at least.  But ah well.  It’s the end of the semester, right?  I don’t expect too much coming out of my kitchen at this point!  As a reinforcement though… try the Coconut Pancakes!  They are the bomb… so to speak.  I made those again this morning.  Mmmmm.

Tonight I invited my parents over so I could make them the kind of hot chocolate that Becca made last Saturday. So, I buy Cayenne pepper powder from the Coop, some cocoa powder and head home to heat up some water and guess at what else Becca mixed in with the drink and how much of “what else”.

When my parents came over, I had one drink cooling (the temperature was a little too hot from the water) and I started making the other two drinks, adding a little less Cayenne at my mom’s insistence. My dad took a big sip from the first cup I had made –that is the one with a half a teaspoon of Cayenne pepper– and practically died.Dad

In fact, his stomach really hurt for a while afterwards. DO NOT put too much Cayenne pepper into this drink!

Spiced Hot Chocolate
Mmmm finally a chocolate drink with some depth!

1 teaspoon nutmeg
1 teaspoon cinnamon
2 teaspoons sugar
1 teaspoon ground cloves
1 1/2 tablespoon pure cocoa powder
1 tiny pinch Cayenne pepper powder
1 mug of warm/hot milk

Directions: mix all together… usually works best if you add dry ingredients together before the wet. Enjoy! Drink!

Mmm this is an amazing recipe to try out! And, unlike traditional white flour pancakes, these pancakes taste real and I know they will stick with me for hours.

Coconut Pancakes
Delicious thick pancakes with a hint of coconut.

2 cups ground spelt, kamut or whole-wheat flour
2 cups Kefir or whole milk plain yogurt
2 eggs, lightly beaten
1/2 teaspoon sea salt
1 teaspoon baking soda
2 tablespoons melted butter
1 cup freeze-dried coconut (or natural coconut in kind of a flake form)

Directions: Soak flour in kefir (or yogurt: use a little water to thin mixture) in a warm place for 12 to 24 hours, covered. Then stir remaining ingredients and, if needed, thin with water for your desired consistency. Use a griddle or cast-iron skillet, add a little olive oil and heat to a low-to-medium temperature. Cook pancakes on each side about 3 – 5 minutes or until there is smoke. Melt butter and raw maple surup on the top before eating.

Here is a wonderful drink!

Coconut Milk Tonic
definition of tonic: medicine that invigorates or strengthens

1 can whole coconut milk
2 1/4 cups water
2 tablespoons [raw] maple syrup
1 teaspoon pure vanilla extract
1 teaspoon dolomite powder

Mix all ingredients together in a medium saucepan over medium-low heat, and heat until warm and dolomite is dissolved.
Makes 4 cups

Dolomite Powder: “an inexpensive and useful calcium supplement…” I consider this optional. If you go this way, remember to get the powder not the pills. Go on-line or go to a Vitamin Shoppe.
